Ingredients

  • 4 potatoes, cubed
  • 1 onion, chopped
  • 1 pepper, diced
  • 150g bacon, chopped
  • 3 garlic cloves
  • 1 tsp paprika
  • 3 eggs
  • Oil
  • Salt and pepper
  • Parsley

Instructions

  1. Boil the potatoes for 8 minutes; drain.
  2. Fry the bacon until crisp; set aside.
  3. In the bacon fat, fry the potatoes until deep golden and crisp.
  4. Add the onion and pepper; cook 5 minutes.
  5. Stir in the garlic and paprika.
  6. Make wells and crack in the eggs; cover and cook 3 minutes.
  7. Top with bacon and parsley.

  • Parboiling the potatoes first gives crispy outside, fluffy inside.
  • Don't move them too much in the pan or they don't crisp.
