Brazilian Pudim

Ingredients

  • 200g sugar
  • 60ml water
  • 1 can condensed milk
  • Same volume milk (use the can to measure)
  • 3 eggs

Instructions

  1. Melt sugar with water in a saucepan until deep amber; pour into a flan tin.
  2. Blend the condensed milk, milk and eggs.
  3. Pour through a sieve over the caramel.
  4. Cover with foil and bake in a bain-marie at 180C for 70-75 minutes.
  5. Cool fully, then chill overnight.
  6. Invert onto a plate.

  • Chilling overnight makes the cleanest release.
