Brazilian Moqueca (Fish Stew)

Ingredients

  • 600g white fish, cubed
  • Juice of 1 lime
  • 1 onion, sliced
  • 1 red pepper, 1 yellow pepper, sliced
  • 3 garlic cloves
  • 2 tomatoes, chopped
  • 1 can coconut milk
  • 1 tbsp paprika
  • 3 tbsp oil
  • Coriander
  • Salt

Instructions

  1. Marinate the fish in lime juice and salt for 15 minutes.
  2. Soften the onion, peppers and garlic in the oil.
  3. Add the tomatoes and paprika; cook 5 minutes.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Slide in the fish and cook gently for 8 minutes.
  6. Finish with coriander.
