Ingredients

  • 4 flour tortillas
  • 1 can black beans, drained
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 cup grated cheese
  • For the salsa: 2 tomatoes diced, 1 small red onion finely chopped, juice of 1 lime, handful coriander, salt

Instructions

  1. Mash the beans roughly with the cumin, paprika and salt.
  2. Spread half a tortilla with beans and cheese, fold over.
  3. Cook in a dry pan over medium heat until golden and the cheese has melted, pressing gently.
  4. Mix the salsa ingredients together.
  5. Cut the quesadillas into wedges and serve with the salsa.
