Ingredients

  • 600g beef, thinly sliced
  • 1/2 cup yoghurt
  • 2 tbsp ginger-garlic paste
  • 2 tbsp bihari masala (or 1 tsp each cumin, coriander, chilli, garam masala)
  • 2 tbsp fried onion, crushed
  • 2 tbsp oil
  • 1 tbsp papaya paste (tenderiser, optional)
  • Salt

Instructions

  1. Mix all the marinade ingredients and coat the beef.
  2. Marinate at least 4 hours, ideally overnight.
  3. Thread onto skewers or spread in a grill pan.
  4. Grill over high heat for 10-12 minutes, turning, until charred and tender.

  • Papaya paste tenderises tough cuts beautifully — don't over-marinate or it turns mushy.
  • Crushed fried onion in the marinade adds rich depth.
