Ingredients

  • 500g beef sirloin, thinly sliced
  • 2 tbsp fermented black beans, rinsed
  • 3 garlic cloves
  • 1 thumb ginger
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • For marinade: 1 tbsp soy sauce, 1 tbsp cornflour, 1 tsp sesame oil
  • For sauce: 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, 1 cup water, 1 tbsp cornflour
  • 3 tbsp oil
  • Spring onion

Instructions

  1. Marinate beef 10 minutes.
  2. Mince black beans with garlic and ginger.
  3. Sear beef in hot oil 2 minutes; set aside.
  4. Stir-fry onion and peppers 3 minutes.
  5. Add the black bean mixture; cook 1 minute.
  6. Pour in sauce and bubble until thick.
  7. Return beef; toss to coat.
  8. Finish with spring onion.
