Beef Stroganoff

Ingredients

  • 500g beef sirloin or rump, sliced
  • 2 tbsp butter
  • 1 onion, sliced
  • 250g mushrooms, sliced
  • 2 tbsp plain flour
  • 300ml beef stock
  • 1 tbsp Dijon mustard
  • 150ml soured cream
  • Salt and pepper
  • Chopped parsley

Instructions

  1. Season the beef and sear in melted butter over high heat for 2 minutes; lift out.
  2. In the same pan, soften the onion, then add the mushrooms and cook until golden.
  3. Stir in the flour, then gradually add the stock and mustard.
  4. Simmer for 5 minutes until thickened.
  5. Return the beef, stir in the soured cream, and warm through without boiling.
  6. Finish with parsley.

  • Sear the beef in batches so it browns properly.
  • Add the soured cream at the end and never let it boil, or it splits.
