Ingredients

  • 1 cup rice
  • 1 cup yellow lentils
  • 1 onion, sliced
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 bay leaves
  • 4 cardamom, 1 cinnamon
  • 4 tbsp oil
  • 5 cups water
  • Salt

Instructions

  1. Dry-roast the lentils briefly until fragrant, then rinse.
  2. Fry the onion in oil until golden, add the whole spices and ginger-garlic.
  3. Stir in the turmeric and cumin.
  4. Add the rice, lentils, water and salt.
  5. Simmer covered for 25 minutes until soft and porridge-like.

  • Roasting the lentils first adds a nutty depth.
  • Add more water for a softer, soupier khichuri.
