Banana Pancakes

Ingredients

  • 2 ripe bananas, mashed
  • 2 eggs
  • 150ml milk
  • 200g plain flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • Pinch of salt
  • Butter for the pan

Instructions

  1. Mash the bananas, then whisk in the eggs and milk.
  2. Fold in the flour, baking powder, sugar and salt until just combined.
  3. Heat a little butter and pour small rounds into the pan.
  4. Cook until bubbles form, then flip and cook briefly.
  5. Stack and serve.
