Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 110g butter, melted
  • 150g sugar
  • 2 eggs
  • 1 tsp vanilla
  • 220g plain flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional: 60g chopped walnuts or chocolate chips

Instructions

  1. Heat the oven to 175C and line a loaf tin.
  2. Whisk the mashed banana with the butter, sugar, eggs and vanilla.
  3. Stir in the flour, baking soda and salt until just combined.
  4. Fold in nuts or chips if using.
  5. Pour into the tin and bake for 50-55 minutes until a skewer comes out clean.
  6. Cool in the tin for 10 minutes before turning out.
