Baked Salmon with Herbs

Salmon fillets baked with lemon, garlic and herbs until just flaky — a healthy dinner in twenty minutes.

Ingredients

  • 2 salmon fillets
  • 1 lemon
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried herbs (or fresh dill)
  • Salt and pepper

Instructions

  1. Heat the oven to 200C.
  2. Place the salmon on a lined tray.
  3. Drizzle with oil, scatter with garlic and herbs, and season.
  4. Squeeze over half the lemon and lay slices on top.
  5. Bake for 12-15 minutes until just flaky.

  • Don't overbake — salmon is best slightly underdone in the centre.
  • Thicker fillets need a couple of extra minutes.
