Baked Feta Pasta

Cherry tomatoes and a block of feta roasted until soft, then tossed with pasta and basil — the dinner the internet adopted.

Ingredients

  • 350g pasta
  • 500g cherry tomatoes
  • 200g feta block
  • 4 garlic cloves
  • 5 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes
  • Salt, pepper
  • Fresh basil

Instructions

  1. Place the cherry tomatoes in a baking dish with the garlic.
  2. Nestle the feta block in the centre.
  3. Drizzle with olive oil and sprinkle with oregano, chilli flakes, salt and pepper.
  4. Bake at 200C for 25-30 minutes until the tomatoes burst and the feta softens.
  5. Meanwhile, cook the pasta until al dente; reserve pasta water.
  6. Mash everything together in the baking dish, loosening with pasta water.
  7. Toss with the pasta and torn basil.
