Ingredients

  • 1 pack square dumpling wrappers
  • For filling: 4 leeks finely chopped, 2 spring onions, 1 garlic, salt
  • For beef sauce: 300g beef mince, 1 onion, 1 tbsp tomato paste, 1 can tomatoes, cumin, coriander
  • Yoghurt sauce as for mantu
  • Dried mint

Instructions

  1. Sweat leeks until soft; cool.
  2. Place a spoon on each wrapper; pinch into half-moons.
  3. Boil in salted water 3 minutes; lift out gently.
  4. Brown beef with onion; add spices, tomato paste and tomatoes; simmer 15 minutes.
  5. Plate: yoghurt, aushak, beef sauce, dried mint.
