Ingredients

  • 1 cup short-grain rice
  • 1 litre milk
  • 1 cinnamon stick
  • Peel of 1 lemon
  • 100g sugar
  • Ground cinnamon to serve

Instructions

  1. Cook the rice in 2 cups water until just tender, 10 minutes.
  2. Add the milk, cinnamon stick and lemon peel.
  3. Simmer gently 30 minutes, stirring often, until creamy.
  4. Stir in the sugar.
  5. Remove the cinnamon and peel.
  6. Serve warm or chilled, dusted with cinnamon.
