Ingredients

  • 4 cooked arepas (see arepas recipe)
  • 2 cooked chicken breasts, shredded
  • 2 ripe avocados, mashed
  • 3 tbsp mayonnaise
  • 1/2 onion, finely chopped
  • Juice of 1 lime
  • Coriander
  • Salt and pepper

Instructions

  1. Mash the avocado with mayo, lime, salt and pepper.
  2. Fold in the shredded chicken, onion and coriander.
  3. Split each warm arepa horizontally.
  4. Stuff generously with the filling.
