Peruvian Anticuchos

Ingredients

  • 800g beef heart (or steak, sliced thin)
  • For marinade: 4 tbsp aji panca paste (or paprika+chilli), 4 garlic cloves, 2 tbsp red wine vinegar, 1 tbsp cumin, 2 tsp oregano, 1 tsp salt, 3 tbsp oil
  • Wooden skewers, soaked
  • Boiled potato and corn to serve

Instructions

  1. Cube the beef heart, removing any tough membrane.
  2. Mix all the marinade ingredients.
  3. Marinate at least 4 hours, ideally overnight.
  4. Thread onto skewers.
  5. Grill over very hot coals (or in a grill pan) for 2-3 minutes a side until charred.
  6. Serve with boiled potato and corn.

  • Beef heart is lean and intensely flavoured — don't overcook.
  • Use sirloin if heart isn't available.

  • Brush with more marinade just before serving.
