American Mac and Cheese

Ingredients

  • 400g macaroni
  • 60g butter
  • 60g flour
  • 750ml milk
  • 250g mature cheddar, grated
  • 150g Gruyère, grated
  • 50g parmesan, grated
  • 1 tsp mustard powder
  • Pinch of nutmeg
  • 100g breadcrumbs
  • 3 tbsp melted butter
  • Salt and pepper

Instructions

  1. Cook pasta until just al dente; drain.
  2. Melt butter, whisk in flour; cook 2 minutes.
  3. Whisk in milk gradually until smooth and thickened.
  4. Stir in cheddar and Gruyère off the heat until melted.
  5. Add mustard, nutmeg, salt and pepper.
  6. Combine with the pasta and tip into a baking dish.
  7. Top with parmesan, breadcrumbs and melted butter.
  8. Bake at 200C for 20-25 minutes until golden and bubbling.

  • Use mature cheddar for the deepest flavour.
