Ingredients

  • For dough: 400g flour, 250ml water, 1 tsp salt, 2 tbsp oil
  • For filling: 3 boiled potatoes mashed, 4 spring onions chopped, 1 tsp ginger, 1/2 tsp turmeric, coriander, salt
  • Oil for pan-frying

Instructions

  1. Mix dough; rest 20 minutes.
  2. Mix filling.
  3. Roll dough thin into rounds.
  4. Spread filling on one half; fold over and seal.
  5. Pan-fry in oil 3 minutes a side until golden and crisp.
