Ingredients

  • 500g beef sirloin, very finely minced (or chopped)
  • 3 tbsp niter kibbeh (or butter with 1/2 tsp cardamom)
  • 2 tsp mitmita (Ethiopian chilli mix) or 1 tsp cayenne + 1 tsp paprika
  • 1/2 tsp cardamom
  • Salt
  • To serve: chopped onion, fresh cottage cheese (ayib), greens

Instructions

  1. Melt the niter kibbeh in a pan over low heat.
  2. Add the mince and cook for just 2-3 minutes — it should still be slightly pink.
  3. Stir in the mitmita, cardamom and salt.
  4. Take off the heat immediately.
  5. Serve warm, not hot.

  • Use the freshest meat you can — kitfo is traditionally raw or barely warmed.
  • Mitmita is the proper spice mix — find it at Ethiopian shops or substitute.

Serving suggestions

  • Serve with injera, fresh cheese and greens.
