Ingredients

  • 2 cans black beans, plus liquid
  • 150g smoked bacon, diced
  • 1 onion, chopped
  • 5 garlic cloves
  • 3 tbsp cassava flour (farofa flour) or polenta
  • 2 bay leaves
  • 3 tbsp oil
  • Salt and pepper
  • Parsley

Instructions

  1. Fry the bacon until crisp; remove and reserve.
  2. Soften the onion and garlic in the bacon fat with the bay leaves.
  3. Add the black beans with their liquid; bring to a simmer.
  4. Mash roughly with a potato masher or stick blender.
  5. Stir in the cassava flour slowly — it thickens.
  6. Cook 5 minutes, stirring.
  7. Top with the crispy bacon and parsley.
