Ingredients

  • 600g pork shoulder, cubed
  • 1/2 cup cornflour
  • 2 eggs, beaten
  • Oil for frying
  • 1 red pepper, 1 green pepper, chunked
  • 1 cup pineapple chunks
  • For sauce: 4 tbsp ketchup, 3 tbsp rice vinegar, 3 tbsp sugar, 1 tbsp soy sauce, 1/2 cup water, 1 tbsp cornflour mixed with water

Instructions

  1. Dip the pork in egg, then cornflour, and deep-fry until golden; drain.
  2. Stir-fry the peppers for 2 minutes.
  3. Mix the sauce ingredients and pour in; bubble until thick and glossy.
  4. Add the pineapple and pork, toss to coat.
