Ingredients

  • 4 chicken breasts
  • 200g spinach, wilted and squeezed
  • 100g sun-dried tomatoes, chopped
  • 150g mozzarella, sliced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried herbs
  • Salt and pepper
  • Cocktail sticks

Instructions

  1. Cut a pocket in each chicken breast.
  2. Mix the spinach, sun-dried tomato, mozzarella and garlic.
  3. Stuff each pocket and secure with cocktail sticks.
  4. Season the outside; brush with olive oil.
  5. Sear in a hot pan 2 minutes a side.
  6. Transfer to a 200C oven for 18-20 minutes until cooked through.
  7. Rest 5 minutes.

  • Don't overstuff or the chicken splits.
  • Sear first for colour, finish in the oven for even cooking.

  • Lovely with new potatoes and salad.
