South African Bobotie

Ingredients

  • 700g beef mince
  • 2 onions, chopped
  • 2 garlic cloves
  • 1 slice bread soaked in milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 2 tbsp chutney or jam
  • 2 tbsp raisins
  • Juice of 1/2 lemon
  • For topping: 2 eggs, 200ml milk
  • Bay leaves
  • Salt

Instructions

  1. Soften the onions and garlic, then brown the mince.
  2. Stir in the curry powder, turmeric, chutney, raisins, lemon and the squeezed bread.
  3. Press into a baking dish.
  4. Beat the eggs with the milk and pour over the top; tuck in a few bay leaves.
  5. Bake at 180C for 30-35 minutes until the custard is set and golden.
