Ingredients

  • 500g beef shin
  • 500g chicken pieces
  • 500g yuca (cassava), peeled and chunked
  • 2 green plantains, chunked
  • 2 corn on the cob, in chunks
  • 2 potatoes, chunked
  • 2 onions, chopped
  • 4 garlic cloves
  • 1 tomato, chopped
  • Coriander stalks
  • 2 spring onions
  • Cumin, salt

Instructions

  1. Simmer the beef in 2.5 litres water with onion, garlic and seasoning for 1 hour.
  2. Add the chicken and cook 20 minutes.
  3. Add the corn, plantain and yuca; cook 20 minutes.
  4. Add potato; cook 15 more minutes.
  5. Finish with chopped coriander, spring onion and a squeeze of lime.

  • Don't stir hard — the yuca and plantain should hold their shape.
  • Eat the meat, vegetables and broth as one bowl.
