Ingredients

  • 1.2kg flank or skirt steak
  • 2 onions, sliced
  • 3 peppers (mix of colours), sliced
  • 6 garlic cloves
  • 2 cans chopped tomatoes
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 100g green olives
  • 4 tbsp oil
  • Salt

Instructions

  1. Sear the beef well, then simmer covered in 1 litre water with half the onion for 2 hours until tender.
  2. Lift out and shred when cool enough.
  3. Soften the peppers, remaining onion and garlic in oil.
  4. Stir in the spices, tomatoes, olives and 1 cup of the cooking broth.
  5. Add the shredded beef and simmer 30 minutes until thick.
