Ingredients

  • 1 whole chicken (1.5kg), spatchcocked
  • For marinade: 4 red chillies, 6 garlic cloves, 2 tbsp paprika, 1 tbsp smoked paprika, juice of 2 lemons, 100ml olive oil, 1 tbsp red wine vinegar, 1 tsp salt

Instructions

  1. Blend marinade; rub onto chicken.
  2. Marinate 4 hours or overnight.
  3. Roast skin-side up at 200C for 45 minutes.
  4. Brush with reserved marinade halfway.
  5. Rest 10 minutes; chop into pieces.
