Ingredients

  • 3 chicken breasts, poached and shredded
  • 2 slices bread, soaked in milk
  • 1 onion, chopped
  • 3 garlic cloves
  • 2 tbsp aji amarillo paste (or mild yellow chilli paste)
  • 100ml evaporated milk
  • 50g grated cheese
  • 30g walnuts, ground
  • 3 tbsp oil
  • Salt
  • Boiled eggs and olives to serve

Instructions

  1. Soften the onion and garlic in oil, then add the aji paste.
  2. Blend the soaked bread with a little milk and stir in.
  3. Add the shredded chicken, evaporated milk, cheese and walnuts.
  4. Simmer gently until thick and creamy.
  5. Season and serve.
