Thai Massaman Curry

Ingredients

  • 800g beef chuck, cubed
  • 3 tbsp massaman curry paste
  • 2 cans coconut milk
  • 3 potatoes, cubed
  • 1 onion, chunked
  • 1/2 cup roasted peanuts
  • 3 tbsp fish sauce
  • 3 tbsp palm sugar (or brown sugar)
  • 2 tbsp tamarind paste
  • 3 cardamom pods
  • 1 cinnamon stick
  • 2 tbsp oil

Instructions

  1. Fry the curry paste in oil until fragrant.
  2. Add the beef and brown.
  3. Pour in one can of coconut milk with the cardamom and cinnamon; simmer covered 1 hour.
  4. Add the potato, onion, the second can of coconut milk, fish sauce, palm sugar and tamarind.
  5. Cook another 30-40 minutes until the beef is tender and the potatoes are soft.
  6. Stir in the peanuts.
