Mediterranean Lamb Kofta

Ingredients

  • 600g lamb mince
  • 1 onion, grated and squeezed
  • 3 garlic cloves, minced
  • Handful parsley, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • Salt and pepper
  • Wooden skewers, soaked
  • Flatbreads, tzatziki, salad to serve

Instructions

  1. Mix all the kofta ingredients and knead for 3 minutes until sticky.
  2. Rest in the fridge 30 minutes.
  3. Shape onto skewers in long sausages.
  4. Grill or barbecue over high heat 4-5 minutes a side until charred and just cooked.
  5. Serve in flatbreads with tzatziki and salad.

  • Kneading well gives the kofta a tender, springy texture.
  • Squeeze the grated onion dry or the mix gets too wet.

  • Wrap in flatbread with all the trimmings.
