Lamb Kofta Kebabs

Juicy spiced lamb kebabs grilled until charred — wonderful in flatbreads with yoghurt and pickles.

Ingredients

  • 500g lamb mince
  • 1 onion, grated and squeezed dry
  • 3 garlic cloves, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • Small handful parsley, chopped
  • Salt and pepper
  • Wooden skewers, soaked

Instructions

  1. Mix all the ingredients well, kneading for a minute or two so the mixture firms up.
  2. Shape into long sausages around skewers.
  3. Chill for 15 minutes so they hold their shape.
  4. Grill or pan-fry over high heat for 4-5 minutes a side until charred and cooked through.

  • Squeezing the grated onion of its liquid stops the mix going wet.
  • High heat for that charred crust is essential.

Serving suggestions

  • Serve in warm flatbreads with garlic yoghurt, hummus, salad and pickles.
