Hungarian Goulash Soup

Ingredients

  • 700g beef chuck, cubed small
  • 2 onions
  • 3 garlic cloves
  • 3 tbsp Hungarian sweet paprika
  • 1 tbsp caraway seeds
  • 3 tomatoes
  • 3 peppers, chunked
  • 4 potatoes, cubed
  • 2 litres stock
  • 3 tbsp oil
  • 1 bay leaf

Instructions

  1. Soften onions slowly in oil 12 minutes.
  2. Off the heat, stir in paprika and caraway.
  3. Add beef and garlic.
  4. Pour in stock with bay; simmer 1 hour.
  5. Add tomatoes, peppers and potatoes; cook 30 minutes more.
  6. Season generously.
