Ingredients

  • 700g stewing beef, cubed
  • 2 tbsp plain flour
  • 3 tbsp oil
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 tbsp tomato paste
  • 750ml beef stock
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper

Instructions

  1. Toss the beef in seasoned flour, then brown in batches in the oil; lift out.
  2. Soften the onions in the same pot, then stir in the tomato paste.
  3. Return the beef, pour in the stock and add the herbs.
  4. Cover and simmer for 1 hour, then add the carrots and potatoes.
  5. Continue for 30-40 minutes until everything is tender.
  6. Adjust the seasoning before serving.
