Colombian Sancocho

Ingredients

  • 1.5kg chicken on the bone, cut up
  • 1 onion, chopped
  • 3 spring onions
  • 4 garlic cloves
  • 2 green plantains, in chunks
  • 500g yuca (cassava), peeled and cubed
  • 3 potatoes, chunked
  • 2 corn cobs, in chunks
  • 1 bunch coriander
  • 1 tbsp cumin
  • 2 tomatoes
  • 2 litres water
  • Salt and pepper
  • Lime to serve

Instructions

  1. Cover chicken with cold water in a large pot; add onion, garlic, tomato and cumin.
  2. Bring to a simmer; cook 25 minutes.
  3. Add plantain and yuca; cook 15 minutes.
  4. Add potato and corn; cook another 15 minutes until everything is tender.
  5. Stir in coriander and spring onions; season.
  6. Serve with lime.

  • Skim the foam as it cooks for a clean broth.
  • Serve in two parts — broth in one bowl, solids on a plate, as is traditional.
