Classic Beef Burgers

Ingredients

  • 600g good beef mince (20% fat)
  • Salt and pepper
  • 4 slices cheese (cheddar or American)
  • 4 burger buns
  • To serve: lettuce, sliced tomato, red onion, pickles, ketchup, mustard

Instructions

  1. Form the mince into 4 loose patties slightly bigger than the bun; press a small dimple in the centre.
  2. Season generously on both sides with salt and pepper just before cooking.
  3. Heat a heavy pan or grill very hot and cook the patties for 3-4 minutes a side.
  4. Add a slice of cheese to each in the last minute and cover briefly to melt.
  5. Toast the buns lightly and assemble with all the toppings.

  • High heat for a proper crust, and don't press down or you squeeze out the juices.
