Chinese Char Siu Pork

Ingredients

  • 1kg pork shoulder, in long strips
  • For marinade: 4 tbsp hoisin, 3 tbsp soy sauce, 2 tbsp honey, 2 tbsp brown sugar, 2 tbsp Shaoxing wine, 4 garlic cloves, 1 tbsp grated ginger, 1 tsp Chinese five-spice, 1 tsp red food colour (optional)
  • 3 tbsp honey for glazing

Instructions

  1. Mix the marinade and coat the pork; rest at least 4 hours, ideally overnight.
  2. Roast at 200C for 25 minutes; turn and roast another 15 minutes.
  3. Brush with honey and grill for 5 minutes until lacquered and slightly charred.
  4. Rest 10 minutes, then slice.
