Mexican Carne Asada

Ingredients

  • 1kg flank or skirt steak
  • For marinade: juice of 4 limes, juice of 1 orange, 6 garlic cloves, 1 jalapeño, 2 tbsp soy sauce, 1 tsp cumin, 1 tsp oregano, big handful coriander, 4 tbsp oil, salt and pepper
  • Tortillas, lime, salsa to serve

Instructions

  1. Blend marinade; pour over steak; marinate 4-8 hours.
  2. Heat a grill or pan very hot.
  3. Cook steak 3-4 minutes a side for medium-rare.
  4. Rest 5 minutes.
  5. Slice thinly against the grain.
  6. Serve in warm tortillas with lime and salsa.
