Caribbean Brown Stew Chicken

Ingredients

  • 8 chicken pieces
  • 2 tbsp brown sugar
  • 2 tbsp oil
  • 1 onion, 1 pepper, sliced
  • 3 garlic cloves
  • 3 spring onions
  • 1 tsp thyme
  • 1 tbsp soy sauce
  • 1 whole scotch bonnet
  • 400ml stock
  • Salt and pepper

Instructions

  1. Season the chicken and marinate 30 minutes.
  2. Heat the oil, melt the sugar until dark, then brown the chicken in it.
  3. Add the onion, pepper, garlic, spring onion and thyme.
  4. Add the soy sauce, stock and whole scotch bonnet.
  5. Cover and simmer for 40 minutes until tender and the sauce is rich.
  6. Remove the chilli before serving.
