Cabbage Rolls

Tender cabbage leaves wrapped around a savoury rice and meat filling, baked in tomato sauce — hearty and homely.

Ingredients

  • 1 large cabbage
  • 500g beef mince
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 egg
  • For sauce: 2 cans chopped tomatoes, 1 tbsp paprika, 1 tsp sugar, salt
  • Oil

Instructions

  1. Boil the whole cabbage for a few minutes, peeling off softened leaves as you go.
  2. Mix the mince, rice, onion, garlic, egg and seasoning.
  3. Place filling on each leaf, fold the sides in and roll up.
  4. Lay seam-down in a dish, pour over the tomato sauce.
  5. Cover and bake at 180C for 1 hour.

  • Trim the thick rib of each leaf so it rolls easily.
  • Pack the rolls snugly so they hold together.

Serving suggestions

  • Serve with soured cream and bread.

Keeps 3 days; freezes well.
