Brazilian Feijoada

Ingredients

  • 2 cans black beans, drained (or 400g cooked from dried)
  • 400g pork shoulder, diced
  • 200g smoked sausage (chorizo or kielbasa), sliced
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp ground cumin
  • 3 tbsp oil
  • Salt and pepper
  • Orange wedges and rice to serve

Instructions

  1. Brown the pork in the oil in batches and set aside.
  2. In the same pot, soften the onion and garlic.
  3. Stir in the cumin, then add the sausage and brown briefly.
  4. Return the pork, add the beans, bay leaves and enough water to cover.
  5. Simmer covered for 1.5 hours until the meat is fork-tender.
  6. Season generously and let the stew thicken uncovered for the last 15 minutes.
