Hearty Beef Stew

Ingredients

  • 800g stewing beef, cubed
  • 2 tbsp flour
  • 2 onions, chopped
  • 3 carrots, chunked
  • 2 potatoes, chunked
  • 2 celery, sliced
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 litre beef stock
  • 1 tsp thyme
  • 2 bay leaves
  • 3 tbsp oil
  • Salt and pepper

Instructions

  1. Toss the beef in the flour, then brown in oil; set aside.
  2. Soften the onions, celery and garlic.
  3. Stir in the tomato paste, then the stock and herbs.
  4. Return the beef, cover and simmer gently for 1.5 hours.
  5. Add the carrots and potatoes and cook another 30-40 minutes until everything is tender.
  6. Season and serve.
