Ingredients

  • 500g beef mince
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 can black beans, drained
  • 4 large tortillas
  • 2 cups cooked rice
  • 1 cup grated cheese
  • To serve: soured cream, salsa, lettuce

Instructions

  1. Brown the mince with the onion and garlic.
  2. Stir in the spices and beans; cook 5 minutes.
  3. Warm the tortillas.
  4. Fill each with rice, the beef mixture, cheese and toppings.
  5. Fold the sides in and roll tightly.
  6. Optional: toast the rolled burritos in a dry pan to crisp.
