Ingredients

  • 1.5kg pork ribs
  • For rub: 2 tbsp brown sugar, 1 tbsp paprika, 1 tbsp smoked paprika, 1 tsp garlic powder, 1 tsp cumin, 1 tsp salt, 1 tsp pepper
  • For sauce: 200ml ketchup, 3 tbsp brown sugar, 2 tbsp apple cider vinegar, 1 tbsp Worcestershire, 1 tbsp soy sauce, 1 tsp smoked paprika

Instructions

  1. Rub the ribs all over with the spice mix; rest 1 hour.
  2. Wrap in foil and bake at 150C for 2.5 hours.
  3. Mix the sauce ingredients and simmer 5 minutes.
  4. Unwrap the ribs, brush with sauce, and grill or oven-roast at 220C for 15 minutes until sticky.
  5. Brush with more sauce before serving.
