Ingredients

  • 2 cups cooked red beans
  • 2 cups cooked white rice
  • 4 chorizo sausages
  • 400g pork belly or chicharrón
  • 4 eggs
  • 2 ripe plantains, sliced
  • 1 avocado
  • Arepas to serve
  • Oil for frying

Instructions

  1. Heat the beans and rice through.
  2. Fry the chorizo until golden.
  3. Fry the pork belly slices until very crispy (chicharrón).
  4. Fry the plantain slices until golden.
  5. Fry the eggs sunny-side up.
  6. Assemble each plate with rice, beans, chorizo, pork, egg, plantain, sliced avocado and an arepa.
