Ingredients

  • 1.5kg beef short ribs (asado de tira)
  • 4 chorizos
  • 4 morcillas (blood sausages)
  • Coarse rock salt
  • Chimichurri to serve

Instructions

  1. Build a fire and let the coals burn down to medium heat — no flame.
  2. Salt the meat with coarse rock salt 30 minutes before cooking.
  3. Place the ribs on the grill bone-side down first.
  4. Cook slowly, 30-40 minutes a side, no flipping.
  5. Add the chorizos and morcillas halfway through.
  6. Rest 5 minutes; serve with chimichurri.
