American Chilli con Carne

Ingredients

  • 800g beef mince
  • 2 onions, chopped
  • 4 garlic cloves
  • 1 pepper, diced
  • 3 tbsp chilli powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 3 tbsp tomato paste
  • 1 can chopped tomatoes
  • 2 cans kidney beans
  • 400ml stock
  • 1 square dark chocolate
  • Salt and pepper

Instructions

  1. Brown the mince with the onion, garlic and pepper.
  2. Stir in the chilli powder, cumin, paprika, oregano and tomato paste.
  3. Add the tomatoes, beans and stock.
  4. Simmer gently for 1 hour, uncovered, until thick.
  5. Stir in the chocolate to finish — it adds depth, not sweetness.
  6. Season and serve.
