African Peanut Stew

A West African-inspired stew of chicken, sweet potato and peanut butter in a deep, savoury sauce.

Ingredients

  • 600g chicken thighs
  • 2 tbsp oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 thumb ginger, grated
  • 2 tbsp tomato paste
  • 1 can chopped tomatoes
  • 4 tbsp natural peanut butter
  • 500ml stock
  • 2 sweet potatoes, cubed
  • 1 tsp smoked paprika
  • 1/2 tsp chilli flakes
  • Salt and pepper
  • Fresh coriander

Instructions

  1. Brown the chicken in the oil; lift out.
  2. Soften the onion in the same pan, then add the garlic, ginger, tomato paste and spices.
  3. Stir in the peanut butter and chopped tomatoes.
  4. Return the chicken, add the stock, and simmer for 20 minutes.
  5. Add the sweet potato and cook another 15 minutes until tender.
  6. Finish with coriander.

  • The sauce should be thick and clinging — simmer uncovered if it looks loose.
